So lately I've been on a serious muffin kick. Like it's really bad. Some weeks I will bake 3 dozen muffins. One week I might make a batch of blueberry, muffin and apple cinnamon. They quickly disappear in my house, so no problems baking that many. Please check out my banana muffin recipe. These muffins will disappear in a matter of minutes.
4 ripe bananas
3/4 cup sugar
1/3 cup melted butter
1 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
Preheat oven to 350 degrees. In one mixing bowl take 4 peeled ripe bananas and mash them to a smooth even consistency, like baby food. Then mix in your sugar, egg, and butter. In another mixing bowl you will take your dry ingredients and mix them together (the flour, baking soda, baking powder and salt). Next gently fold the dry ingredients into the wet ingredients until just mixed. Do not over beat the mixture. Next take a spoon and evenly divide the muffin mix into a sprayed muffin pan and bake for 22 minutes. And that's it! Eat warm or let cool.
