Bursting Blueberry Muffins

A while back I stopped buying box mixes for muffins. I might be attempting to get rid of processed foods, GMOs and soy. But that's for another blog. So for a while I've been working on my blueberry muffin recipe. Which, honestly is kinda hard when you want your muffins to be made with "good for you" ingredients, taste delicious and not have all your blueberries drowning in the muffin. If you have ever made homemade blueberry muffins before, your know what I mean by drowning blueberries. All the poor blueberries have sunk down to the bottom of the muffins. So, I hope you like this recipe. My children love it.


1/3 cup softened butter
3/4 cup sugar
2 eggs
3/4 tsp vanilla
1 tsp baking powder
1/4 tsp salt
1/4 tsp cinnamon
1 1/2 cups flour ( I replaced 1/2 cup white flour for whole wheat flour)
1/4 cup milk
1 1/2 cups blueberries

PREHEAT OVEN TO 400 degrees.

Spray muffin pan with cooking spray or use paper liners. Mix butter, sugar, eggs, vanilla and milk together in a mixing bowl. In another mixing bowl combine flour, baking powder, salt, and cinnamon. Pour dry ingredients into the wet mixture and evenly fold together. Lastly fold in blueberries. Evenly separate mixture and spoon into a muffin pan. A nice option is to sprinkle a tiny bit of granulated sugar to the tops of the muffins before placing into the oven. Bake for 18 minutes.
